Sporo pečena teleća rebra savršen su izbor za bebe i djecu jer se pripremaju jednostavno, bez jakih začina, kako bi bila nježna za osjetljive dječje želuce. Teleće meso je mekano, lako probavljivo i bogato nutrijentima, dok cikla dodaje prirodnu slatkoću i vrijedne vitamine. Dugotrajno pečenje osigurava izuzetnu mekoću mesa, čineći ga idealnim za prve zalogaje mališana.

Priprema marinade:
- U mužar staviti žličicu krupne soli i žličicu sjemenki gorušice te usitniti u prah.
- Natrljati rebra sa smjesom soli i gorušice.
- U posudu staviti 2 češnja češnjaka i jedan prerezan luk, grančicu ružmarina i svježi timijan. Na to staviti rebra prethodno natrljana i sve skupa zaliti sa 4 žlice maslinovog ulja i 2 žlice jabučnog octa. Zaklopiti posudu, protresti i ostaviti preko noći u hladnjaku.
Sastojci:
- 1 kg telećih rebra
- desetak malih krumpira ( nismo ih rezali, koristimo male)
- 2 mrkve, ostaviti cijele
- 3 cikle ( prerezati na 4 dijela, 6 ako je velika cikla)
- 2 češnja češnjaka
- 3 ljutike ( može i običan luk)
Teleća rebra – priprema:
Mi koristimo Dutch oven za pripremu ovog jela.
- Zagrijte ghee maslac i prepržite rebra sa svih strana dok ne dobiju lijepu zlatnosmeđu boju.
- Izvadite rebra, a u istu posudu dodajte malo maslinovog ulja i ubacite narezano povrće.
- Posolite povrće s dva prstohvata soli. Ako je beba mlađa od 12 mjeseci ovaj korak preskočite.
- Dobro promiješajte povrće kako bi se ravnomjerno obložilo uljem.
- Na povrće položite rebra, dodajte grančicu ružmarina, prelijte s 100 ml temeljca (ili vode), poklopiti i staviti u pećnicu na 200°C na sat i pol.
- Otvorite lonac, okrenite meso, povrće stavite preko mesa, ponovno poklopite i vratite u pećnicu na još 30 minuta na 200°C.
- Otkrijte lonac, pojačajte temperaturu na 220°C i pecite još 20 minuta kako bi se sve lijepo zapeklo.
- Djeci poslužiti u prilagođenim komadima ili povrće usitniti/blendati i poslužiti kao kremasti umak preko malih komada mesa.

Recipe: Slow-Roasted Veal Ribs with Beetroot
Slow-roasted veal ribs are an excellent choice for babies and kids as they are prepared simply, without strong spices, making them gentle on sensitive little stomachs. Veal is tender, easily digestible, and rich in nutrients, while beetroot adds natural sweetness and valuable vitamins. Slow roasting ensures exceptional softness, making it ideal for little ones exploring solid foods.
Marinade Preparation:
- In a mortar, combine one teaspoon of coarse salt and one teaspoon of mustard seeds, then grind into a fine powder.
- Rub the veal ribs with the salt and mustard seed mixture.
- In a dish, place two garlic cloves, one halved onion, a sprig of rosemary, and fresh thyme. Lay the seasoned ribs on top, then drizzle with four tablespoons of olive oil and two tablespoons of apple cider vinegar.
- Cover the dish, shake gently, and let it marinate overnight in the refrigerator.
Ingredients:
- 1 kg veal ribs
- 10 small potatoes (left whole)
- 2 carrots (left whole)
- 3 beets (cut into quarters, or into six pieces if large)
- 2 garlic cloves
- 3 shallots (or regular onion)
Preparation:
We use a Dutch oven for this dish.
- Heat ghee butter and sear the ribs on all sides until they develop a nice golden-brown crust.
- Remove the ribs and add a little olive oil to the same pot, then toss in the chopped vegetables.
- Sprinkle two pinches of salt over the vegetables. If serving to a baby under 12 months, skip this step.
- Stir the vegetables well to ensure they are evenly coated in oil.
- Place the ribs on top of the vegetables, add a sprig of rosemary, and pour in 100 ml of broth (or water). Cover and bake at 200°C (392°F) for 1.5 hours.
- Open the pot, flip the meat, place the vegetables on top of the ribs, cover again, and return to the oven for another 30 minutes at 200°C (392°F).
- Uncover the pot, increase the temperature to 220°C (428°F), and bake for another 20 minutes to develop a nice crust.
Serving Suggestions:
- For toddlers and older kids: Serve in bite-sized pieces.
- For babies: Blend the vegetables into a creamy puree and serve it over small pieces of meat.
