- 1 srednja tikvica
- 300 g ricotte
- 3 jaja

Priprema:
- Tikvicu naribajte i dobro ocijedite rukama ili u gazu kako bi odstranili višak vode. Mi smo ocijedili rukama.
- U većoj posudi pomiješajte maslinovo ulje, jaja, naribanu tikvicu, sitno narezani mladi luk, koricu limuna i sok limuna.
- Dodajte pirovo brašno postupno, dok ne dobijete teksturu gušćeg biskvita.
- Na kraju lagano umiješajte 200 g ricotte i sve dobro sjedinite.
- Smjesu rasporedite u papirnate košarice za muffine i pecite u prethodno zagrijanoj pećnici na 180°C s ventilatorom oko 25 minuta, dok muffini ne poprime lijepu zlatnu boju.
Prijedlog za zdravi premaz:
Umjesto klasičnog šlaga, na ohlađene muffine možete staviti kremasti namaz od ricotte.
Sastojci:
- 100 g ricotte
- korica limuna
- nekoliko kapi maslinovog ulja
Sve sastojke izmiksajte štapnim mikserom u glatku kremu i premažite ili ukrasite muffine.

- Grate the zucchini and squeeze out as much liquid as possible using your hands or a clean kitchen towel.
- In a large bowl, mix the olive oil, eggs, grated zucchini, thinly sliced spring onions, lemon zest, and lemon juice.
- Gradually add the spelt flour until you get a slightly thicker, cake-like batter.
- Gently fold in 200 g of ricotta and mix until combined.
- Divide the mixture into muffin liners and bake in a preheated oven at 180°C (with fan) for about 25 minutes until golden brown.
