Priprema:
- Operite povrće. Mrkvu ogulite i narežite na pola kao i tikvicu, luk na četvrtine.
- U lonac stavite sve sastojke i dodajte malo vode da prekrije sastojke. Kuhajte na srednjoj vatri oko 40 minuta. Ako koristite express lonac ili instant pot, skratite vrijeme na 25 minuta i stavite manje vode jer voda u tim loncima ne isparava.
- Kada je povrće omekšalo, ostavite ga da se malo ohladi zatim sve stavite u blender i blendajte do glatke teksture.
- Smjesu vratite na štednjak, dodajte malo maslinovog ulja, papra i soli za veću djecu i kuhajte još 10-15 minuta dok se ne reducira i zgusne.
- Poslužite s omiljenom zdravom tjesteninom ili kuhanim žitaricama poput prosa, heljde ili quinoe.

- 2 cans of organic peeled tomatoes (or homemade peeled tomatoes)
- 2 carrots
- 1 onion
- 1 zucchini
- 2 cloves of garlic
- Fresh basil and oregano (if you don’t have fresh oregano, leave it out as dried oregano has a different taste)
- A handful of cashews
- 2 dried plums
- A pinch of pepper
- Olive oil
Preparation:
- Wash the vegetables. Peel the carrots and cut them in half, as well as the zucchini. Quarter the onion.
- Place all the ingredients in a pot and add enough water to cover them. Cook over medium heat for about 40 minutes. If using a pressure cooker or an Instant Pot, reduce the cooking time to 25 minutes and add less water, as these pots retain moisture.
- Once the vegetables have softened, let them cool slightly, then blend everything until smooth.
- Return the mixture to the stove, add a little olive oil, pepper, and salt (for older children), and cook for another 10-15 minutes until the sauce reduces and thickens.
- Serve with your favorite healthy pasta or cooked grains such as millet, buckwheat, or quinoa.
