- 1 cvjetača

- Pripremite odreske od cvjetače – odrežite cvjetaču na tri jednaka “odreska” i stavite ih na vruću tavu s otopljenim ghee maslacem.
Dodajte krupno narezanu ljutiku, češnjak u kori, cijele cherry rajčice, grančice timijana i origana te prstohvat soli i papra. Za svježinu ubacite dva komada korice limete (oguljene gulilicom za krumpir). - Nakon 3-4 minute, kad cvjetača dobije zlatnu boju, okrenite odreske. Ponovno začinite prstohvatom soli i papra.
Povrće će pustiti dovoljno tekućine, pa nije potrebno dodavati ništa osim, po želji, još malo maslaca. - Prebacite tavu u pećnicu (zagrijanu na 200°C) i pecite oko 30 minuta dok cvjetača ne postane mekana, mirisna i blago karamelizirana.
- Pripremite proso: dok se cvjetača peče, zakuhajte biljno mlijeko u lončiću i dodajte prethodno isprani proso. Kuhajte na laganoj vatri oko 15 minuta, dodajući po potrebi malo vode.
- Napravite umak: u blender ubacite skuhani proso, zatim dodajte povrće iz pećnice (cherry, ljutiku i češnjak bez kore). Po potrebi dolijte malo mlijeka i izblendajte dok ne dobijete glatku, kremastu teksturu.
- Poslužite: na tanjur stavite kremasti umak od prosa i na njega položite sočan odrezak od cvjetače. Za završni touch dodajte nekoliko kapi maslinovog ulja i naribajte svježu koricu limete.
