Ovaj povrtni rižoto savršeno je rješenje za vas – brzo, jednostavno i sezonski prilagodljivo jelo koje je ujedno i fini rižoto bez mesa, idealan za malu djecu, ali i za roditelje koji žele pojesti nešto lagano i ukusno.
Tajna savršenog, kremastog rižota krije se u povrtnom temeljcu koji sami pripremate od ostataka povrća koje čistite za rižoto – kora od luka, češnjaka, mrkve… ništa se ne baca, a okus je neusporedivo bolji.
Kod pripreme je važno povrće rezati na sitne, ravnomjerne komadiće kako bi se lijepo sjedinilo s rižom, a dobra vijest je da povrću ne treba puno soli, što ovo jelo čini idealnim i za naše najmlađe.
U nastavku donosim recept koji garantira da će vaš povrtni rižoto uvijek biti savršeno kremast i ukusan.

Sastojci
- 250 g arborio riže ( za djecu mlađu od 12 mjeseci preporuka je koristiti heljdu)
- 1 luk (po mogućnosti ljutika), narezan na kockice
- 3 češnja češnjaka, narezana na kockice
- 2 srednja poriluka, narezana na sitne trakice
- 3 srednje mrkve, narezane na tanke trakice
- 1 rog paprika, narezana na tanke trakice
- 3 žlice maslinovog ulja
- nekoliko cherry rajčica
- sol, papar, muškatni oraščić
- 1 žlica maslaca
Opcionalno:
- 4 svježa listića kadulje
- 2 grančice svježe majčine dušice
Priprema
- Zagrijati maslinovo ulje u širokom loncu. Dodati luk i listiće kadulje. Kad luk omekša, dodati češnjak.
- Izvaditi listiće kadulje i dodati papriku. Miješati oko 5 minuta na srednje jakoj vatri.
- Dodati mrkvu, miješati novih 5 minuta.
- Dodati par žlica povrtnog temeljca pa dodati poriluk, sol i papar. Nastaviti miješati 5 minuta. Dodati listiće majčine dušice (bez grančica).
- Usipati arborio rižu i neprestano miješati, postupno dolijevajući povrtni temeljac. Kuhati 25-30 minuta na laganoj vatri, uz stalno miješanje i dolijevanje temeljca.
- Deset minuta prije kraja kuhanja ubaciti prepolovljene cherry rajčice.
- Kad je riža kuhana, ugasiti vatru, posuti muškatnim oraščićem, dodati maslac i dobro promiješati. Ostaviti nekoliko minuta da se okusi sjedine i rižoto malo ohladi.
- Po vrhu posipati prehrambeni kvasac.

The secret to a perfect, creamy risotto lies in a homemade vegetable broth made from the scraps of veggies you clean for the risotto – onion skins, garlic peels, carrot ends… nothing goes to waste, and the taste is incomparable.
When preparing, it’s crucial to chop the vegetables finely and evenly so they blend beautifully with the rice. Another plus: you don’t need much salt, making this dish perfect for kids.
Here’s the recipe that will ensure your vegetable risotto is always creamy and delicious.
Ingredients
- 250 g arborio rice (for children under 12 months, it is recommended to use buckwheat)
- 1 onion (preferably shallot), finely diced
- 3 cloves garlic, finely diced
- 2 medium leeks, cut into thin strips
- 3 medium carrots, cut into thin strips
- 1 red horn pepper, cut into thin strips
- 3 tablespoons olive oil
- a few cherry tomatoes
- salt, pepper, nutmeg
- 1 tablespoon butter
Optional:
- 4 fresh sage leaves
- 2 sprigs fresh thyme
Preparation
- Heat olive oil in a large pot. Add onion and sage leaves. When the onion softens, add garlic.
- Remove sage leaves and add pepper. Stir for about 5 minutes over medium heat.
- Add carrots and stir another 5 minutes.
- Add a few tablespoons of vegetable broth, then add leeks, salt, and pepper. Continue stirring for 5 minutes. Add thyme leaves (without stems).
- Pour in the arborio rice and stir constantly, gradually adding vegetable broth. Cook for 25-30 minutes on low heat, stirring frequently and adding more broth as needed.
- About 10 minutes before the end, add halved cherry tomatoes.
- Once the rice is cooked, turn off the heat, sprinkle with nutmeg, add butter, and stir well. Let the risotto rest for a few minutes so the flavors combine and it cools slightly. Add nutritional yeast on top.
