Ako tražite zdravu, ukusnu i jednostavnu krem juhu od šparoga, idealnu i za male i za velike – na pravom ste mjestu! Ovaj brzi recept za juhu od šparoga savršen je za proljetne dane. Nježna tekstura, bogat okus i lako probavljivi sastojci čine je izvrsnim izborom za zaposlenu obitelj.
U nastavku donosimo detaljan recept koji uključuje klasične sastojke, ali i prijedlog zamjene za biljni jogurt za one koji izbjegavaju ili nisu uveli mliječne proizvode.

Sastojci
- 400 g šparoga (pitome)
- 1 glavica ljubičastog luka, narezana na kockice
- 3 češnja češnjaka, narezana na kockice
- 2 jušne žlice grčkog jogurta
- ili biljnog jogurta po izboru (za vegansku verziju)
- 1,5 litara temeljca (od šparoga)
- 1 jušna žlica limunovog soka
- 2 jušne žlice maslinovog ulja
- Prstohvat soli
- ½ žličice mljevenog papra
- ½ žličice mljevenog muškatnog oraščića
Priprema
1. Priprema temeljca
- Odrežite cca 3 cm dna stabiljke šparoga, operite i stavite u lonac s vodom.
- Kuhajte oko 30 minuta kako biste dobili lagani temeljac.
2. Priprema juhe :
- Dok se temeljac kuha narežemo šparoge na 1-2 cm kolutiće, a krajeve/vrhove špragoga ostavimo sa strane, njih nećemo koristiti za juhu.
- U duboku zdjelu promiješamo šparoge, narezan luk i češnjak, prstohvat soli, pola žličice mljevenog papra i 2 žlice maslinovog ulja.
- Zagrijemo lonac i sve iz zdjele ubacimo u lonac, miješamo 5 minuta na laganoj vatri i dodamo temeljac, da prekrije sav sadržaj.
- Kuhamo na srednjoj vatri cca 15 minuta i sve stavimo u blender ili usitnino štapnim mikserom. Mi koristimo blender jer tekstura juhe bude prozračnija, lakša, pjenastija.
- Vratimo juhu u lonac, umiješamo 2 žlice grčkog (biljnog) jogurta te žlicu limunovog soka i juha je tu. Ukrasimo s maslinovim uljem i muškatnim oraščićem, a za starije i s par kapi guste acceto kreme, mi koristimo od smokve.
Vrhove šparoga koji su najslađi dio smo prepržili na grill tavi 2-3 minute i grickali uz juhu.

Asparagus Soup – Light and Healthy Recipe for the Whole Family
If you’re looking for a healthy, tasty, and easy cream of asparagus soup, perfect for both little ones and grown-ups – you’re in the right place! This quick asparagus soup recipe is ideal for spring days. Its smooth texture, rich flavor, and easily digestible ingredients make it a great choice for a busy family.
Below you’ll find a detailed recipe with classic ingredients, as well as a suggestion for using plant-based yogurt for those who avoid or haven’t introduced dairy products yet.
Ingredients
- 400 g cultivated asparagus
- 1 red onion, diced
- 3 cloves of garlic, diced
- 2 tablespoons Greek yogurt
- or plant-based yogurt of choice (for a vegan version)
- 1.5 liters asparagus broth
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- A pinch of salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground nutmeg
Preparation
1. Making the broth
Cut off about 3 cm from the bottom of the asparagus stalks, wash them, and place them in a pot of water.
Cook for about 30 minutes to create a light, flavorful broth.
2. Making the soup
While the broth is cooking, cut the asparagus into 1–2 cm pieces. Set aside the tips – they won’t be used in the soup.
In a large bowl, mix the chopped asparagus, onion, garlic, a pinch of salt, ½ teaspoon black pepper, and 2 tablespoons olive oil.
Heat a pot and transfer the mixture into it. Sauté on low heat for about 5 minutes, then pour in enough broth to cover all ingredients.
Simmer on medium heat for about 15 minutes, then blend everything using a blender or immersion blender.
We prefer a blender for a lighter, more airy, and creamy texture.
Return the soup to the pot, stir in 2 tablespoons of Greek (or plant-based) yogurt and 1 tablespoon of lemon juice.
Garnish with a drizzle of olive oil and a sprinkle of nutmeg.
For adults, a few drops of thick fig balsamic glaze are a delicious touch.
We grilled the asparagus tips – the sweetest part – on a grill pan for 2–3 minutes and served them as a crunchy snack alongside the soup.
