Savršeni su za male ručice, dječje zabave, užinu ili zdravi doručak. A najbolji dio? Ne sadrže rafinirani šećer (u verziji za bebe), a lako ih možete prilagoditi i najmlađima tako da izostavite sol i čokoladne kapljice.

Sastojci za najsočnije čokoladne muffine od tikvica
- 1 i pol šalica naribane, neocijeđene tikvice (otprilike jedna srednje velika tikvica)
- 2 jaja
- 1/4 šalice otopljenog kokosovog ulja (možete koristiti i maslinovo ulje ako nemate kokosovo)
- 1/3 šalice javorovog sirupa (za manju količinu šećera možete koristiti prah datulja)
- 1 žličica mljevene mahune bourbon vanilije
- 2/3 šalice kašice od jabuke (to je otprilike jedna izblendana jabuka u sjeckalici ili štapnim mikserom s jednom žlicom vode)
- 2 i 1/4 šalice pirovog brašna
- 1/4 šalice kakao praha
- 2 žličice praška za pecivo
- 1 žličica cimeta
- Mrvica soli (za bebe izostavite)
- 1/3 šalice čokoladnih kapljica bez šećera (za bebe izostavite)
Priprema čokoladnih muffina od tikvica
- Pripremite tikvicu – Naribajte tikvicu i lagano ocijedite višak vode (nemojte je potpuno osušiti, želite da ostane malo sočnosti).
- Napravite kašicu od jabuke – Jabuku izblendajte u sjeckalici ili štapnim mikserom dok ne dobijete glatku kašu. Ako je pregusta, dodajte žlicu vode.
- U većoj zdjeli pomiješajte naribanu tikvicu, kašicu od jabuke, otopljeno kokosovo ulje, jaja i javorov sirup.
- U drugoj zdjeli pomiješajte sve suhe sastojke: pirovo brašno, kakao prah, prašak za pecivo, cimet, sol i mljevenu vaniliju.
- Suhe sastojke pažljivo umiješajte u mokre pomoću špatule. Nemojte previše miješati – samo dovoljno da se spoje sastojci.
- Na kraju umiješajte čokoladne kapljice (ako ih koristite).
- Smjesu rasporedite u kalupe za muffine. Pecite na 200°C otprilike 30 minuta (ovisno o vašoj pećnici). Provjerite čačkalicom – ako izađe suha, muffini su gotovi.
- Ostavite muffine da se kratko ohlade prije posluživanja.

Ingredients for the Juiciest Chocolate Zucchini Muffins
- 1 and a half cups grated, un-drained zucchini (about one medium zucchini)
- 2 eggs
- 1/4 cup melted coconut oil (or olive oil if you don’t have coconut oil)
- 1/3 cup maple syrup (for less sugar you can use date powder)
- 1 tsp ground bourbon vanilla bean
- 2/3 cup apple puree (about one blended apple with one tablespoon of water)
- 2 and 1/4 cups spelt flour
- 1/4 cup cocoa powder
- 2 tsp baking powder
- 1 tsp cinnamon
- A pinch of salt (omit for babies)
- 1/3 cup sugar-free chocolate chips (omit for babies)
Preparation of Chocolate Zucchini Muffins
- Prepare the zucchini – Grate the zucchini and lightly squeeze out excess liquid (don’t dry it completely – you want to keep some moisture).
- Make the apple puree – Blend the apple in a food processor or with a hand blender until smooth. Add a tablespoon of water if it’s too thick.
- In a large bowl, mix the grated zucchini, apple puree, melted coconut oil, eggs and maple syrup.
- In another bowl, mix all dry ingredients: spelt flour, cocoa powder, baking powder, cinnamon, salt and ground vanilla.
- Gently fold the dry ingredients into the wet mixture using a spatula. Do not overmix – just enough to combine everything.
- Finally, fold in the chocolate chips (if using).
- Divide the mixture into muffin cases. Bake at 200°C (about 390°F) for approximately 30 minutes (baking time depends on your oven). Check with a toothpick – if it comes out clean, the muffins are ready.
- Let the muffins cool slightly before serving.
